WHY

One of best memory of my childhood is a family tradition we used to have almost every Sunday for lunch: my grandparents used to make a big batch of Pizza in Teglia in Roman style to share with the whole family. It was more than just eating, it was a moment of sharing stories, various problems of the past week and intentions of the new week coming. In those moments there was no space for worries but only for jokes, smiles and amazing tasting pizza.

Sharing Sunday lunch brought us together so much as a family and I realized just later what a privilege that was that not many people had growing up. The atmosphere that those moments created inspired me to open a business that could transmit that feeling of sharing that I always loved.

And what a better product than Roman Pizza in Teglia that in comparison to round Neapolitan pizza for just one person or any other food, it can be easily shared because of the bigger size and the easy cut.

The idea of the business was to have various family and/or friends gathering, eating something delicious food and creating memories.

I was so passionate about this idea, that I decided to give it a try: I moved to London and start selling Pizza in Teglia from a Citroën HY Van.

The beginning was not so easy: other than the obvious cultural shock, completely different language and the homesickness, I also had to face the fact that British people have a completely different idea on cuisine and eating habits than what I was used to.

I didn’t find the pleasure of cooking, eating and sharing a meal together, that is so common in my Italian culture. You might say, “yeah, well, during the week I have to work, I don’t have the time to cook and eat with my children”. I understand that, but if I have to be honest, not even on weekends I had the pleasure to see any of the meal sharing that I was expecting to find on British dining table. So how could I offer something based on a completely different view than what people are used to?

But instead of discouraging me, this obstacle has instead made me stronger and has increased even more my willing to bring my idea that is behind the business I built. I would like to make the DoDough Pizza the meeting point for friends, for children, for families, and to make it a little tradition to enjoy and share a tasty Pizza in Teglia. I want for children to create memories based on sharing simple moments like that together. I also want to change the idea of pizza as the unhealthy super fast food that is pretty much diffuse in here and other countries. When the pizza is made in the right way and with the selected healthy ingredients, it can become not only a deliciously indulgent treat for yourself but also a healthy and light meal to digest.

ORIGINS

The concept of pizza “in Teglia” (which translate to “on the oven tray”) was born in Rome almost by chance in the first post-war, when some skilled craftsmen coming from the city of Terni in the region of Umbria, had the idea to create something more original than usual bread. They experimented by adding a bit of lard and oil into the dough and some tomato and mozzarella on top to make it much more pleasant and tasty but also a lot more filling and caloric due to the presence of animal fat (the lard) with obvious effects on health and digestibility.

The taste was great but the result was really heavy on the stomach and the time changing and the new busy life of the modern families that characterized the middle/late twentieth century, required a big change in many aspects of everyday life, nonetheless the food choices.

This is why, many years later from the first trial, in the early 1980s, a group of pizza masters faced this health-related problem of the pizza with specific studies on the preparation method, making many changes on the process: first, they eliminate the lard or any other animal fats with great positive reduction of fat and calories and replaced it exclusively with extra virgin olive oil; secondly, they increased of about 25-30% the amount of water the dough and they opted for a much higher quality flour with more elasticity and strength in order to increase the maturation hours; and then finally the reduced the amount of yeast in the preparation to make the final product lighter and easier to digest.

The result was great and lead to Rome being the absolute queen of the Pizza in Teglia in the whole Italian territory!

Many people born in Rome will always have the childhood memory of this type of pizza served as street food, even as school snacks between classes. Why? Well, because there is something magical about eating something fast but still with a great taste from many of the “Pizzeria al Taglio” found in the city.

However, even after all those changes, the Roman Pizza in Teglia is constantly evolving today.

The pizza in Teglia, today, is characterized by a dough with a high content of water (for every kg of flour min.800g), which translates in a tall, soft, but crunchy and friable at the bottom.

Usually this dough it is raised for a minimum of 24 hours to a maximum of about 96 hours to allow proper and complete yeast growing. It is then spread out in the rectangular baking tin and cooked for only a few minutes at 300 °C.

The high amount of water and rising hours leads to the formation of large alveoli (like a honeycomb structure) which is the visible proof of good digestibility in comparison to other types of pizza packed in yeast and raised for only one hour. Plus the quality choice of the other simple ingredients like water, salt, yeast, flour and extra virgin olive oil will make a great difference in the final taste of the pizza.

This is the reason why this awesome pizza is now spreading and conquering most of the Italian territory!

Great Pizza. Excellent service.

My friend and I were walking past yesterday and tried a sample. We ended up buying a slice each and chatting to the chaps running it.

I finished the slice then ended up buying a full pizza to take home and share with the wife as it was that good.

I wish I had tried this place sooner. Keep up the good work guys !!! we will definitely be back.
